Tiger Nuts

Tiger nuts, one of the hottest superfoods on the market, are actually not nuts. they are small, tuberous rhizomes of a sedge grass (cyperus esculentus lativum). Tiger nuts have been cultivated for millennia around the world. They are know by various names in different countries. In Spain, where they’re known as chufa, they’re the traditional ingredient for horchata.

They can be eaten freshly dug out of the ground, or roasted, boiled, or juiced. Packaged tiger nuts are usually dried to improve their shelve lives. they’re also sold as tiger nut flour and tiger nut milk.

Tiger nut flour is used in the production of confectionaries. It is also used to produce soap and starch extracts. Tiger nut oil is used for deep fries and salad toppings, while the juice can substitute for milk in in the production of yogurt etc.
